1) You can't either take medications or undergo therapy. You have to do both.
2) You can't take medications or undergo therapy. You have to do both.

Are the above grammatical and meaningful?

I don't think '2' works. Maybe if one accentuates 'or' a lot?

The initial sentences are both grammatically possible but NOT semantically identical, since you wish to deny the choice between the actions, not the actions in and of themselves.
